It all starts with hand-picking the right cows. A2 Doodh is a 100% natural fresh cows’ milk from specially selected indigenous (desi) cows, not a product of genetic engineering or hormone driven dairy. We work with farmers to identify and select genuine indigenous breed of cows like Gir with the hump on back that naturally produce milk containing only the A2 protein, and is free from all A1 protein. Only these cows are milked to produce completely natural A2 Doodh that’s full of nutritional goodness.

The milk is cultured to form yogurt which is churned using traditional bi-directional churning process to produce makkan (sweet butter).

As per Ayurveda, bi-directional churning process increases medicinal properties in ghee. The makkan is then heated to produce ghee. 24 to 30 litres of milk is required for 1 litre of Brahma Muhurta Ghee. This ghee is grainy, liquifies at body temperature and has golden hue.

What is A1/A2 Ghee?

Cow’s milk is about 87 percent water and 13 percent solids—the solids being a combination of fat, carbohydrates in the form of lactose, minerals and protein. The major component of the milk proteins is casein; in turn about 30-35 percent of the casein (equivalent to two teaspoons in a litre of milk) is beta-casein, of which there are several varieties, determined by the genes of the cow. The most common of these variants are A1 and A2.

A1 beta-casein protein can cause digestive issues. A1 milk releases a peptide called (BetaCaso – Morphine 7) BCM7 which is not broken down into amino acids making it impossible to digest. Many studies have linked consumption of A1 milk to diseases like diabetes, coronary heart disease, autism, schizophrenia, etc.

What are the benefits of A2 Ghee?

Desi cows have a distinct hump on the back while HF/Jersey cows do not. This is the easiest way to identify a desi cow. Milk derived from desi cows is good for the body, mind and soul. Milk is an important source of calcium, protein & fat. A2 milk is the natural milk from our desi cows which is easy to digest and helps increase immunity, it is so called “stomach – approved” milk and helps fight various diseases. Some people have had the experience that their digestive problems, diabetes, cholesterol issues, etc have disappeared from changing to A2 milk.

What is the natural A2 protein?

There are commonly many types of proteins naturally found in milk. Beta-casein protein is one type that accounts for about a third of the total milk protein. All cows make beta-casein protein. However, it’s the type of beta-casein that we believe makes all the difference for many.  A2 beta –casein protein is recognised as being the original beta-casein protein in cows. That is, originally all domesticated cows produced milk containing only the A2 protein. Research has shown that A1 and A2 proteins digest differently. Current and growing scientific evidence supports that the different protein fragments produced have an impact on aspects of digestive function.

Ordinary cows’ milk contains 2 types of beta-casein protein, A1 and A2. A2 Doodh is natural milk that comes from selected cows that naturally produce only the A2 protein and no A1. Research has shown the A2 protein is digested differently to A1.

There are many people who feel uncomfortable after they drink ordinary milk or lactose-free milk, yet they can enjoy A2 Doodh without discomfort – so this one small protein difference makes a big difference to many people.

The reason behind it is Pasteurization which is the process of heat processing a liquid or a food to kill pathogenic bacteria to make the food safe to eat. Because of which milk becomes a little whitish from yellowish.

Beta-casein is one of the major proteins in milk of cows, buffaloes and other mammals.  Research studies have shown that there are different variants of beta-casein in milk evolved over hundreds of years due to mutation and selective breeding for high milk and protein yields. There are 15 known variants of beta-casein out of which A1 and A2 are major. Beta-casein-A1 (alleged bad casein) differs from A2-casein only by one amino acid at position 67 (proline in A2 and histidine in A1).

While we’re not seeking organic certification at this point, we guarantee that our milk is free of hormones and antibiotics.  It’s important to remember that all milk currently sold in India, whether it’s organic or not, is a mix of A1 and A2 protein and therefore cannot offer the unique health benefits of a2doodh. Our product A2doodh is pasteurized and it’s shelf life is 24 hours. And you can consume it as it is. Because A2doodh is pasteurized milk. If the milk is non pasteurised then u must boil it in order to kill the harmful bacterias inside it. Drinking raw milk (must be pasteurized or homogenized) is not harmful to body. The process of pasteurization and homogenization is to make milk safe for human.
